Garden Fresh Dill Garlic Butter Salmon

Fresh herbs, simple ingredients and a meal that celebrates the flavors of summer.

Ingredients

• 4 salmon fillets (about 6 ounces each)
• 4 tablespoons butter, melted
• 2 tablespoons olive oil
• 4 cloves garlic, minced
• 2 tablespoons fresh dill, finely chopped
• 1½ tablespoons fresh lemon juice
• 1 teaspoon lemon zest
• ½ teaspoon sea salt
• ½ teaspoon freshly cracked black pepper

Instructions

Pat the salmon dry with paper towels.

In a bowl, whisk together the melted butter, olive oil, garlic, dill, lemon juice, lemon zest, salt and pepper.

Pour about two-thirds of the marinade over the salmon and refrigerate for 20 to 30 minutes. Reserve the remaining marinade for brushing over the salmon while it cooks.

Bake at 400° for 12 to 15 minutes, or grill over medium-high heat for 6 to 8 minutes. Brush with the reserved marinade during cooking and finish with a squeeze of fresh lemon juice and a sprinkle of chopped dill.

Serve with roasted asparagus, green beans, baby potatoes, wild rice or a fresh garden salad.
